How was your Thanksgiving? I hope it was cozy and was enjoyed with the ones you love. I spent my Thanksgiving completely relaxing! It felt amazing! I decided to make dinner easy this year and just make the foods that we absolutly love. I kept it simple and it was surprisingly quick to make.
David and I don’t eat turkey so we decided to have a Tofurky this year. Tofurky is a great alternative for vegetarians or vegans during holidays or anytime of the year really. I took our favourite Fall root vegetables, threw them into a roaster with the Tofurky and added some garlic, chunks of onion, olive oil and rosemary. I simply added a splash of Braggs liquid aminos and placed it in the oven for an hour and fifteen minutes. It was an easy, delicious Thanksgiving dinner.
I also made our famous whipped cauliflower potatoes. I simply steamed the cauliflower, processed them until smooth with a garlic clove, olive oil and a splash of vegetable broth. Again, so simple, so easy. For the full recipe click here.
I also made us a raw, natural cranberry sauce. This was so simple and unexpectedly delicious! I am so happy that I did this! This is seriously delicious. I had to refrain from eating it straight out of the bowl. I’m determined to find more uses for this lovely creation!
Here’s how I did it:
Healthy Cranberry Sauce Recipe
3 Cups Cranberries
1 Orange (1 large or 2 small – juice and pulp)
3 Tbsp Maple Syrup (Coconut Sap or Agave Nectar – to make this sugar free use 12 drops of liquid stevia or to taste)
2 Tbsp Orange Rind
Place all ingredients into a food processor.
Blend until smooth.
Place in a bowl and refrigerate for 2 hours.
This was the end result of our delicious meal!
