Quinoa Brownies with Cookie Dough Frosting
Pin ItOur cookie dough hummus was such a hit! Everyone is so excited about this new, sweet way to enjoy hummus. This recipe is so versatile that it also can be used as frosting. That is what we’re going to use to top our Quinoa Brownies today!
These brownies are gluten free, high in protein and include a vegan option. They are packed with fiber and are a guilt-free way to indulge in ‘cakey-chocolate.’
I didn’t make this recipe overly sweet because I find with the cookie dough hummus frosting it is perfectly sweet enough. If you prefer a sweeter brownie feel free to add more agave, honey or stevia.

Quinoa Brownies with Cookie Dough Frosting
Makes 16 Brownies
Ingredients:
- 1 Cup Cooked Quinoa
- 2 Packets Truvia (or Stevia of Choice)
- 1/4 Cup Cocoa
- 1/4 Cup Unsweetened Almond Milk
- 3 Tbsp Plain Pumpkin Puree
- 2 Eggs (or 1/4 Cup Ground Flax, 2 Tbsp Water and 2 Tbsp Nut Butter)
- 1 Tbsp Vanilla
- 2 Tbsp Agave (or Honey/Stevia)
- 1/8 Tsp Baking Soda
- 1/4 Cup Dark Chocolate Chips
Directions:
- Place all ingredients (excluding the dark chocolate chips) into the food processor and blend until smooth.
- Pre-heat your oven to 375 F.
- Stir chocolate chips into pureed batter.
- Grease your 8×8 baking dish.
- Spread batter evenly into pan.
- Bake for 19-22 minutes.
- Remove brownies from oven and let set for 5-10 minutes before moving to a cooling rack.
- Let cool and cut into bars.
- Right before serving frost these brownies with the cookie dough icing found here.
