UPDATE: Below you will find a Vegan Cheesecake Layer Option and a Non-Vegan Option – choose which you prefer and use that in your recipe.

I wanted to shake up the classic carrot cake recipe and put my frozen treat spin on it! I made the carrot cake in my raw, blended fashion and instead of icing I used a cheesecake top. Of course I threw in pineapple because I love that flavor in carrot cake!

Next time you want carrot cake make these… they are truly divine!

This recipe is skinny, gluten free, no-bake, raw/vegan option, 5 minute prep, and a whole lot of carrot cake yummyness.
 

Skinny Carrot Cake Cheesecake Bites

Makes 16-18 Bites

Crust Ingredients:

  • 1 Cup Pre-Soaked Pitted Dates
  • 1 Cup Unsweetened Shredded Coconut
  • 2 Cups Pecans
  • 1 Tsp Vanilla Extract
  • 1 Tsp Cinnamon
  • 1/2 Cup Carrots

Non-Vegan Cheesecake Ingredients:

  • 1/2 Cup Reduced Fat or Light Cream Cheese (Room Temperature)
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Non-Fat Plain Greek Yogurt
  • 2 Tbsp Honey (Agave, Maple Syrup or Stevia – to make it no sugar)
  • 3 Packets of Stevia
  • 1/3 Cup Pineapple Chunks

OR

Vegan Cheesecake Layer Ingredients:

  • 3 Cups Pre-Soaked Cashews (I soak mine overnight)
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Agave Nectar (Maple Syrup or Honey)
  • 1 Tsp Vanilla Extract
  • Juice of 1/2 a Lemon
  • 1/3 Cup Pineapple Chunks

Directions:

  1. Using your small food processor bowl and blade blend all cheesecake filling ingredients until smooth and set aside.
  2. Using your large food processor bowl and blade process all crust ingredients until dough like consistency with visible chunks of nut.
  3. Grease an 8×8 baking pan or glass dish with a healthy oil.
  4. Press crust mixture evenly into baking dish.
  5. Top with cheesecake filling using a spoon or spatula to make sure the filling is evenly distributed over the crust.
  6. Cover with saran wrap and freeze overnight.
  7. When you’re ready to serve remove from the freezer, cut into squares and top with crushed pecans, shredded coconut and coconut whipped cream (optional).
  8. Serve immediately.
