I love this summer salad!
It’s crunchy, sweet and spicy – all blended together. It is really wonderful.
The base of the salad is crunchy roasted chickpeas with cayenne pepper and sea salt. Need more info on roasting chickpeas? Check out this link.
Instead of using a salad dressing we are using pureed peaches. It is perfectly naturally sweet and combined with the fresh banana peppers and the cayenne it is a winning combination.
This salad reminds me of our Quinoa Fiesta Salad (found here) another great salad option.
This recipe is vegan, dairy free, fresh, gluten free and so tasty!
Sweet Peach and Spicy Chickpea Salad
Prep time: 10 Minutes
Yield: Makes 3 Servings
- 3-4 Cups Chopped Romaine Lettuce
- 1 Diced Cucumber
- 1/4 Cup Banana Peppers
- 1 Chopped Red Pepper
- 1 Diced Mango
- 4 Tbsp Hemp Seeds
- 2 Peaches (Pureed)
- 2 Cups Pre-Roasted Chickpeas (with olive oil, salt and cayenne pepper)
- Place all ingredients decoratively in a large bowl.
- Drizzle Peach Puree and Hemp Seeds over top.
- Serve and enjoy!
