Healthy Chocolate Chip Cookie Dough Fudge

Prep time: 5 Minutes
Yield: Makes 10-12 Squares

  • 1 1/2 Cups Cooked and Drained Chickpeas (Canned are fine)
  • 1/4 Cup Natural Peanut Butter (Almond, Cashew or any Seed Butter works as well)
  • 1/2 Tsp Ground Cinnamon
  • 1/4 Cup Unsweetened Almond Milk
  • 1/4 Cup Maple Syrup (Agave, Honey or Stevia – I used liquid stevia in this recipe in place of the maple syrup to make it sugar free. Start with 10 drops, taste the batter and add more if needed)
  • 1 Tsp Vanilla Extract
  • Dash of Sea Salt
  • 1/3 Cup Dark Chocolate Chips
  • 1/4 Cup Ground Flax
  • 2 Tbsp Coconut Oil

  1. Place all ingredients, excluding the chocolate chips, into your food processor and blend until completely smooth.
  2. Stir in chocolate chips.
  3. Line an 8×8 (or smaller) pan with plastic wrap.
  4. Spread mixture evenly on top.
  5. Cover baking dish with plastic wrap and place in the freezer for 5 hours or overnight.
  6. Remove from freezer and let set on the counter for 20-25 minutes (think like taking a cheesecake out of the freezer pre-consumption for that creamy texture).
  7. Cut into squares and enjoy!
  8. Tip – Keep fudge pieces in the freezer until ready to serve.

Yum Amy, I made this for my treat this week. I used stevia instead of Agave, it’s fabulous! I had 3 squares, trying to hold out on the fourth!

    • Amy Layne

So great to hear :) It is yummy!!! Enjoy

  • Sarah Wolfe

Fabulous! Any tips on where to find chocolate chips without sugar?

    • Amy Layne

Hey Sarah! Check out Whole Foods. They have some great options!

      • Sarah Wolfe

Thanks, Amy. My local WF doesn’t carry any healthy alternatives. Do you have a favorite brand I can track down elsewhere?

        • Keely McNeill

Enjoy Life has choc chips and choc chunks that are gluten, dairy, nut, soy, and lactose free. But they are still delicious!!

        • Sahar

Lily’s brand makes really delicious chocolate chips. They’re sweetened with stevia and some erytherol and you’d never guess! I get them at Whole Foods but you said yours doesn’t have them so I would order online :)

I’m going to give this a try – sounds really good. We use brown rice syrup as our sweetner… I’ll let you know how that works.

  • Amrita Gill

These were good… but the peanut butter taste just seemed to overwhelm the flavour. Perhaps you might suggest a better quality peanut butter than unsweetened, unsalted Kraft peanut butter?

    • Amy Layne

That is great! The recipe does suggest natural unsweetened nut butter.

Could we use presoaked cashews in place of the chickpeas?

    • Amy Layne

  • GiGi Eats Celebrities

That’s INCREDIBLE! It looks exactly like the real thing!

what is ‘ground flax’? Do you mean the seeds or the oil?

    • Amy Layne

      Ground flax seeds.

  • Jesse

I once tried a healthy cookie bar recipie using white beans, and it tasted too brant because 1 1/2 cup seems like a lot. If I wanted to minimize the beans, what could I replace it with ?

Do you think coconut milk will work?

    • Amy Layne

no, it would be too “icy”

  • DianeB

This recipe looks so yummy!! Do you ever put the calorie and fat content with the recipes?

  • Lori

I want to make this now, but don’t have chickpeas. I do have white beans (cannellini). I wonder if those would work?

    • Amy Layne

      The is great to hear!

  • Sarah

Any suggestions if you have a family member with a coconut allergy? This includes the oil.

    • Amy Layne

You could use more nut butter!

Does anyone know the calorie content? Thanks!

I took a chance on this to bring to super owl and it was barely edible. Everyone picked at it. Why not add a little extra flavor to truly satisfy the craving? Should we live with with half-flavored desserts or should we splurge just a little and be disciplined a lot? I am washing this down the drain with the colander to retrieve my expensive organic chocolate chunks. I hardly ever eat dessert and when I do it has to taste better.

Do you have to peel the chickpeas?

    • David Duizer

Hi Meghan! No you don’t need to peel the chickpeas. They work great straight from the can.

  • Kristen Banks

I just made this…I used red lentil & sprouted green lentil puree that was left over & my kids went nuts for it!! I used the Wowbutter instead so I can send it to school with them. Ended up making 2 batches and added extra Wow butter & flax, then hemp & chia as well. Stirred in the chocolate chips while it was still warm so it has chocolate swirls throughout. It was my supper, don’t judge me 😉

    • Amy Layne

That sounds great! Thank you for the love!
