This is not as much a recipe as it is sharing with you one of my favorite desserts for the summer months.
If you have followed my blog for the last few years you will know that every summer I do the Bikini Body Program. I love how I feel light, lean, toned and long for the summer months when doing the program.
When I run the program I want the best results I can possibly get so I keep my treat options clean especially in the last 8 weeks. Clean for me means not avoiding desserts but picking the most natural, whole ingredient foods possible that are processed the least.
This means no bloat and no weight gain.
Below you will find pictures of one of my favorite treat options. I literally just take whatever fruit looks the most fresh and ripe, layer it up on bamboo skewers and drizzle my coconut oil chocolate over them.
This recipe is vegan and gluten free so it is also “on plan” when doing the 21 Day Vegan Cleanse.
You can dip your fruit skewers in the chocolate or do the light drizzle like I do for less. To make the coconut oil chocolate you just follow my Icy Square Chocolate recipe but skip the freezing steps keeping the chocolate at room temperature.
I always have a glass jar of this coconut oil chocolate in my cupboard (this will be a varying texture depending on how hot of a climate you live it).
This way I can place the fruit kabobs in the refrigerator before drizzling the chocolate and it will harden on or leave the fruit at room temperature and the chocolate will be creamy.
You can also scoop out a spoonful of the icy square chocolate into an ice cube tray, pop it into the freezer for 5-10 minutes and have a personal portion chocolate square at any time.
