As the seasons change cool desserts become that much more popular. If you are fan of my Snickers Bar or Turtles recipes you will love this one!

This is an all natural vegan version of the Snickers Ice Cream Bar. This is a rich treat that can satisfy all of your cravings.

Vegan snickers ice cream bar1
 

Snickers Ice Cream Bar

Prep time: 10 Minutes
Yield: Makes 6-8 Full Size Ice Cream Bars

Chocolate Ingredients:

  • 1 Cup Virgin Coconut Oil
  • 1/2 Cup Natural Cocoa Powder
  • 1/4 Cup Natural Maple Syrup

Caramel Ingredients:

  • 1 Cup Pre-Soaked or Extremely Fresh Pitted Medjool Dates
  • 3 Tbsp Maple Syrup (or 10 Drops Liquid Stevia)
  • 2 Tbsp Almond Butter
  • 1/2 Tsp Sea Salt
  • 2 Tbsp Coconut Oil
  • 1 1/2 Tsp Vanilla Extract

Extra Ingredients:

  • 1 Cup Dry Roasted or Raw Peanuts

Ice Cream Ingredients:

  • 4 Cups Frozen and Pre-Chopped Bananas
  • 2 Tbsp Coconut Oil
  • 1 Tsp Vanilla Extract
  • 10 Drops Liquid Stevia (or 1-2 Tbsp Maple Syrup)

Directions:

  1. Place chocolate ingredients into your food processor and blend until smooth (stopping to scrape down the sides). Set aside.
  2. Place all caramel ingredients into your food processor and blend until smooth (stopping to scrape down the sides). Set aside.
  3. Place all ice cream ingredients into your food processor and blend until smooth.
  4. Place in the freeze until ready to use.
  5. Using silicone bar molds (rectangle or round work great) layer caramel, peanuts and top with ice cream.
  6. Place molds in the freezer for 3 hours – overnight.
  7. Just before serving remove molds from your freezer, gently pop bars on to plates and with a spoon coat evenly with chocolate coating.
  8. Let set for 4 minutes before serving to let the ice cream become a soft fluffy texture.
  9. Enjoy!
  10. Tip – to enjoy right away you can just drizzle the chocolate over the caramel, peanut, ice cream mixture without any wait time.
