I love warm baked veggies in the Fall and Winter. I often enjoy them simply baked at a low temperature for a long time with just a little sea salt and pepper.

Once in a while I get a craving for a “deep fried”-type flavored veggies. Now I would never get deep fried zucchini sticks and I’m sure at this point in my life I really wouldn’t enjoy them but the pub food idea still gets me craving. So I take my cravings and create something that I would not only enjoy eating for the flavor but also feel good about putting into my body.

I have in the past made my eggplant fries, avocado fries and zucchini coins but they all included egg. At this time in my life I was eating eggs so this was fine but now I do not eat eggs. This season I have created already a vegan version of spicy sweet potato fries with garlic avocado dip and now these zucchini sticks that are delicious served with the avocado dip or my garlic hummus. The classic plain marinara also goes great.

The zucchini sticks I created have a cheesy flavor due to the use of nutritional yeast. I love using nutritional yeast to replace regular dairy cheese.

These zucchini sticks aren’t as firm as what a deep fried, heavily breaded version would be so I enjoy eating them with a fork.

This recipe is vegan, gluten free, grain free, egg free, dairy free, all natural, high fiber and delicious.

Baked "Cheesy" Zucchini Sticks

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Yield: Makes 4-6 Servings

Baked

Ingredients:

  • 1 1/2 Tbsp Melted Coconut Oil
  • 1/2 Tsp Sea Salt
  • 1/3 Cup Almond Flour
  • 3 Zucchinis (cut into wedges)
  • 1/4 Cup Nutritional Yeast (Optional for vegan cheesy flavor)
  • Sriracha Sauce (Optional for heat)

Directions:

  1. Pre-heat your oven to 375F.
  2. Place cut zucchini wedges into a medium to large sized bowl and drizzle coconut oil over.
  3. Stir zucchini sticks and completely coat with coconut oil.
  4. In a separate small bowl combine nutritional yeast, almond flour and salt.
  5. Sprinkle combined mixture over oiled zucchini sticks and coat evenly (I use a stirring and pressing down method to completely coat the sticks).
  6. Place zucchini sticks evenly on a parchment covered baking sheet (single layered and if there are any crust ingredients left in the bowl press them onto your zucchini sticks).
  7. If you are using sriracha now drizzle that onto your zucchini sticks.
  8. Place in the oven and bake for 25-30 minutes (until golden brown).
  9. Serve immediately and enjoy with marinara sauce, garlic hummus or our garlic avocado mayo.
