It’s no secret that I love raw vegan salted date caramel. I have been creating recipes with this magical creation for years now.

Vegan Salted Caramel is one of my favorite treats in the whole world. These Salted Caramel and Peanut Truffles are just a twist on the classic salted caramel.

This Salted Caramel and Peanut Truffles recipe is a fabulous treat but it also can be used as a snack and is awesome as a pre-workout energy boost. This recipe takes only minutes to make and you can store them in your freezer or refrigerator for a quick to grab snack (that is if they last at your house :)).

This recipe is vegan, gluten free, raw, grain free, dairy free, added sugar free, and all-natural, whole ingredient truffles.
 
Caramel and Peanut Truffles
 

Salted Caramel & Peanut Truffles

Prep Time: 10 minutes

Yield: Makes 20-24 Truffles

Salted Caramel & Peanut Truffles

Ingredients:

  • 15 Large Soft (Fresh and Pitted) Medjool Dates
  • 1 1/2 tsp Vanilla Extract
  • 1/2 tsp Fine Sea Salt
  • 1 Tbsp Coconut Oil
  • 2 Tbsp Natural Pure Almond Butter
  • 10 Drops Liquid Stevia
  • 1 Handful Crushed Raw Peanuts

Directions:

  1. Place all ingredients into your food processor and blend until smooth stopping to scrape down the sides (keep blending and scraping until the mixture is smooth and dough-like).
  2. Line a bowl with saran wrap and scrape caramel dough into it.
  3. Place in the freezer for 1 hour.
  4. Cover a large plate with parchment paper or saran wrap.
  5. Place crushed peanuts in a bowl.
  6. Remove caramel dough from the freezer and using a melon baller or just a spoon and your hands roll into 1 inch balls.
  7. Dampen your hands a little with warm water.
  8. Roll each individual ball in your hands and then roll with a spoon into your crushed peanuts pressing down to get peanut pieces to press into your truffles.
  9. Place truffles in a sealed tight container and store in the freezer.
  10. Keep caramels in the freezer or refrigerator in a sealed tight container until ready to enjoy as there are no preservatives in this recipe.
  11. Enjoy!
