If you love pecan pie you will adore these Pecan Pie Ice Cream Bars with Chocolate Brownie Crust.

The top layer is a creamy, sweet pecan pie ice cream that also happens to be packed with fibre and is dairy free. The bottom layer is a rich, nutty chocolate brownies crust. Yes, this recipe is basically heaven!

What rounds out this recipe as amazing is that you create it in your freezer. No fuss and tastes amazing!

This recipe is a yummy fall treat. I loved having these bars in my freezer for a quick to grab treat when I was craving something sweet this week.

They are vegan, gluten free, dairy free, high fibre and are made with all natural whole food ingredients.

Pecan Pie Ice Cream Bars with Chocolate Brownie Crust

Yield: Makes 12 Bars

Pecan Pie Ice Cream Bars with Chocolate Brownie Crust

Ingredients:

    Chocolate Brownie Crust Ingredients:
  • 1 Cup Natural Almonds
  • 1 Cup Natural Walnuts
  • 1 Cup Soft Fresh Pitted Medjool Dates
  • 1/4 tsp Sea Salt
  • 1 tsp Vanilla Extract
  • 3-4 Tbsp Natural Cocoa Powder (you can use carob here if you wish)
  • Pecan Pie Ice Cream Layer Ingredients:
  • 8-10 Super Fresh Pitted Dates
  • 1/2 Cup Pecan Pieces
  • 1/4 Cup Chia Seeds (pre soaked for 15 minutes in 1/4 of water)
  • 4 Chopped Frozen Bananas
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • A Few Drops of Liquid Stevia (if you desire - I do not use this as I find it sweet enough)

Directions:

  1. Place all crust ingredients in the food processor and pulse until the mixture is a crumbly dough.
  2. Line your 8x8 baking dish with an over flowing piece of parchment paper for easy removal.
  3. Press dough evenly into the bottom of your baking dish.
  4. Place all Pecan Pie ice cream ingredients into a clean food processor bowl (excluding pecan pieces) and blend until completely smooth stopping to scrape down the sides.
  5. Mix in pecan pieces with a spatula.
  6. Layer pecan ice cream mixture on top of chocolate brownie crust.
  7. Place in the freezer for at least 4 hours OR overnight.
  8. Remove from freezer, let sit for 5 - 10 minutes before slicing, slice and serve immediately.
  9. Store in the freezer.
  10. *In the pictures above I used extra pecans to top and my icy square chocolate to drizzle over before serving.
