Gather round, still your hearts and listen close. The rumor is true. You CAN have ice cream for breakfast (…the crowd roars).

I miss Game of Thrones… anyway.

I wanted to create a fun, healthy and delicious breakfast option to shake things up. In came these fantastic Ice Cream Breakfast Bars.

These Ice Cream Breakfast Bars contain some powerful superfoods, they are super filling and pack some wonderful clean energy.

Here are some simple reasons why I love the ingredients used to create this fantastic recipe:

Oats: Oats contain B vitamins, fiber, magnesium, manganese and silica. This to me is a great combination for healing, your skin and have a calming effect.

Coconut Oil: Coconut oil is one of my favorite healthy fats. When buying coconut oil be sure you are buy Virgin, Cold Pressed, Organic for the highest quality. As most of you know I use coconut oil also on my body and in my hair (Check out my Body Butter here).

Dates: Dates are a wonderful source of energy, are high in fiber and contain B vitamins.

Cinnamon: Cinnamon is anti-inflammatory and anti-microbial (hello the added bonus of fresh breath!).

Chia Seeds: Chia seeds are an excellent source of omega 3 and 6. They are also fantastic for making you feel full longer. They can be great as an intestinal cleanser. Just make sure to drink lots of water.

Strawberries (Berries or fruit): Strawberries are packed with vitamin C and anti-oxidant flavonoids.

This recipe is vegan, gluten free, no bake, dairy free, high fiber, nutrient dense and unbelievably good.
