Sometimes I forget how fun it is to cook for my husband. It can feel like a chore at times but on those rare night where I feel creative and pretend I’m live on my own cooking show…(yes I do do this) it’s so fun! Here’s what I cooked up tonight for supper.
Lime juice
Minced Garlic
Chopped Onion
I sauteed these over a medium-low heat until the onions were transparent.
Tofu (sub with chicken or beef)
Broccoli
Zucchini
Celery
Red Pepper
Cook until your protein is cooked (if you are cooking with meat of course you would want to cook these first before adding veggies).
Cook the veggies and protein mixture until broccoli is el-dante. Don’t over cook these veggies
You want to keep as many nutrients as possible.
I removed my portion of the dinner and set it aside.
I then added my pre-cooked brown rice to the veggies and protein just to heat it up.
Amy’s Special Sauce
2 tbsp natural peanut butter
1 tbsp braggs aminos
1 tbsp maple syrup
1 sprinkle of hot pepper flakes
Heat in sauce pan until PNB is melted and ingredients are mixed. Pour sauce over veggie and rice mixture. Add a few almonds on top! This is a yummy meal!!
There are ways to make 1 dinner and still meet everyone’s needs/goals. My husband can have more calories and things like carbohydrates at different times in the day than me. This does not mean we can not enjoy a meal together!
