You can serve this over brown rice (depending on the meal) and cottage cheese or greek yogurt (instead of sour cream).

Ingredients

1 onion, chopped
1 15 oz can black beans, rinsed
1 15 oz can kidney beans, rinsed
2 cups frozen corn, thawed
1 8 oz can sugar free tomato sauce
2 14.5 oz diced tomatoes with chilies
1 packet reduced sodium taco seasoning
2 boneless skinless chicken breasts
Instructions

-Mix all ingredients together in a slow cooker/crock pot except chicken breasts.
-Lay chicken breasts on top of mixture and cover.
-Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
-30 minutes prior to serving, remove chicken breasts and shred.
-Return chicken to slow cooker and stir in with mixture.

YIELD: 12 Servings(3/4 cup)

COOKING TIME: 6 to 8 hours on low; 3 to 4 hours on high
