Many of us are getting our lives back on track after summer. The kids are going back and the routine is in full swing. I know this is a busy time of year for everyone and some have a hard time fitting in their fitness. During a stressful week like this one remember that nutrition is 80% of your health and weight loss success so preparing your healthy meals will keep you on track when there is no time for all your workouts. I want to share with you a couple great snacks and some healthy spins on our favorite lunches.
Cherry Larabars:
Ingredients:
– 1/4 cup chopped dates (roughly chopped whole dates, not pre-chopped)
– 1/4 cup dried cherries or dried cranberries
– 1/3 cup whole pecans, almonds or walnuts
– 1/8 teaspoon cinnamon
Place the dates and cherries in a food processor or blender. Blend until it becomes like a paste. Transfer ingredients to a medium bowl. Add the nuts to the processor and pulse until finely chopped. Add the nuts, along with the cinnamon, to the bowl with the fruit paste. Use your fingers to knead the nuts into the paste. Next you can spread the paste out in a pan and cut or squish into bar shape form and wrap in plastic to store.

Light Blueberry Muffin
Ingredients:
– 2.5 cups vanilla Protein Powder
– 1.5 cups egg whites
– 3 tbsp crush walnuts
– 2 tbsp ground flaxseed
– 2 tbsp unsweetened almond milk
– 1 tbsp coconut oil
– 1.5 tbsp cinnamon
– 3 tsp baking powder
– 1/8 tsp sea salt
Combine ingredients in a large mixing bowl and mix well. Stir 1/2 cup blueberries into the mixture and bake at 350 for 15 min or until the middle is cooked. Top with powdered stevia!
Eat-Clean Egg Salad
Ingredients:
– 1/4 cup / 60 ml fat-free cottage cheese
– 1 Tbsp / 15 ml skim milk
– 1 tsp / 5 ml mustard
– 4 hardboiled egg whites, diced
– 1 hardboiled yolk
– 2 Tbsp / 30 ml chopped green onion
– 2 Tbsp / 30 ml chopped celery
– Dash curry powder
– 1/4 tsp / 1 ml sea salt
Whip cottage cheese and milk until smooth in medium-sized mixing bowl.
Blend remaining ingredients except egg whites with cottage cheese mixture.
Add diced egg whites to cottage cheese mixture. Mix well. Enjoy this on Ezekiel or 100% Whole Grain bread.
I hope you enjoy these simple ‘back to school’ recipes. Remember a small amount of exercise is better than none. Set your alarm for 20 minutes earlier than you normally get up and walk 10 minutes away from your house. At the 10-minute mark turn around and head home! I hope your week goes smoothly.
