Ingredients
1 cup lentils, rinsed
1 leek, sliced
1 carrot, chopped
1 8 oz packaged baby portobellos, sliced
2 cloves garlic
1 quart vegetable broth
1 TB cumin
1 tsp cayenne
1 tsp paprika
4 small bay leaves
1 package spinach
2 T white balsamic vinegar
Instructions
Put all ingredients, except spinach and vinegar, in crockpot. Cook on high for 4 hours, or low on 8 hours. About 10 minutes before the end of cooking add the spinach and the vinegar.
PREPARATION TIME: 10 minutes
COOKING TIME: 4 hours on crock pot, 1 1/2 on stove
