Serves 4: This is so easy and such a tasty way to enjoy the nutrients of sweet potatoes. Serve them as is or with a spread or dip; top with tomato sauce for an easy first course; or spread a tbsp of pesto or tapenade.
Tip: For the herbs use parsley, thyme, oregano, chives, rosemary, tarragon, dill, or chervil.
Preheat oven to 375
Rimmed baking sheet, lightly oiled
1 Large sweet potato
1 Tbsp of olive oil
1 tbsp of fresh chopped herbs
sea salt and freshly ground pepper
Directions: Peel sweet potato and slice length wise into quarter inch thick slices. Arrange slices on prepared baking sheet. Brush one side with oil and sprinkle with herbs, salt and pepper. Bake in preheated oven, turning once, for 25 min or until lightly browned on both sides.
