Pumpkin At-Home Latte

Simple, easy and quick!

Coffee- your favorite at home coffee
Unsweetened almond milk vanilla ( to taste)

Pumpkin pie spice( 1tea spoon or to taste )

Stevia ( to taste. If you can have a little sugar the day use agave nectar instead)

Just stir and enjoy!

Pumpkin Smoothie (Makes 1 Serving)

Ingredients
1 cup Greek yogurt
1/2 cup pumpkin (use canned-no sugar added)
1 tbsp agave
1 tsp pumpkin pie spice (no sugar added)
2 tbsp protein powder (BOKU)

Directions

Step 1 – Place all ingredients in a blender, and blend till smooth.

Step 2 – Pour it into a pretty glass, find a relaxing place to sit, and sip .

Pumpkin Pie Smoothie

Ingredients:
1/2 Cup Canned Pumpkin
1/2 Cup Plain Low-Fat Yogurt
1/4 Cup Unsweetened Canned Coconut Milk
2 Tbsp Agave Nectar
1/2 Tbsp Cinnamon*
1/8 Tbsp Ground Ginger*
*or use pumpkin pie spice
1/4 Teaspoon Pure Vanilla
1 Cup Ice Cubes
1 Cup Skim Milk

Pumpkin Banana Muffins

Ingredients:
1 cup whole wheat flour
1 cup whole wheat pastry flour
1/2 cup rolled oats
1/4 cup oat bran
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1.5 large ripe bananas, mashed
1/2 of a 15 oz. can pumpkin puree
1/2 cup unsweetened applesauce
4 egg whites
1 tbsp ground flaxseed
1/3 cup agave or stevia

Directions:
-Preheat oven to 350 degrees.
-Spray with cooking spray or line muffin tins with paper liners.
-Combine flours, bran, oats, baking powder, spices, baking soda and salt in a medium bowl.
-Using whisk or spoon, stir until well mixed.
-Combine remaining ingredients in a large mixing bowl; beat until smooth.
-Gradually beat in flour mixture until just combined
-Spoon into prepared pans or tins.
-Bake for 20 to 25 minutes, until toothpick inserted in the middle of the muffin comes out clean.
-Remove muffins from pan and cool on wire rack as soon as they come out of the oven.

Pumpkin Spice Protein Bars (Makes 15 bars)

Ingredients
1 1/2 cups quick oats (the 3 min kind)
1 cup peanut butter (natural)
1/2 cup honey
1/2 cup pumpkin (no sugar added)
1/2 cup apple sauce (unsweetened)
1 cup protein powder (BOKU)
2 tbsp pumpkin pie spice (no-sugar added)

Directions
Preheat oven to 350 degrees F.

Step 1 – Roast your oats for 10-15 minutes on a cookie sheet (Or until they turn a nice golden brown). Remove from oven and allow to cool completely.

Step 2 – Mix all ingredients in a bowl.

Step 3 – Spread dough to 1/2 inch thickness in a baking dish or 1/2 sized cookie sheet.

Step 4 – Bake for 20 minutes or until the dough has a nice golden brown appearance.

Step 5 – Allow to cool. Slice into bars and store in a Tupperware container or Ziploc bag.

Pumpkin Pie Oatmeal

Sometimes it is good to try something new. Eating clean isn’t about getting board. There are lots of healthy ways to switch up your favorite meals. Try this yummy breakfast!

Makes 1 Serving!

1/4 cup low fat milk (or soy or almond milk – I used almond)
6 Tablespoons water
1/4 cup old fashioned Oats
Pinch cinnamon
Pinch nutmeg
1/8 cup canned pumpkin
1/8 cup sliced almonds or chopped walnuts
Stevia or other sweetener (I use Agave sweetener)
1/8 cup water
1/2 scoop vanilla protein powder

In a small pot, bring milk and water to a boil over medium heat. Add oats, cinnamon and nutmeg. Reduce heat to medium low and simmer until liquid is absorbed, about 7-10 minutes, stirring occasionally.

Once liquid is absorbed, stir in pumpkin, almonds, and sweetener of your choice, set aside.

Combine water and protein powder in a separate bowl. Mix with fork until protein is dissolved. Pour over Oatmeal and serve.

Clean Eating Stuffed Zucchini
(Makes 14 halves)

A great appetizer or main course!

Ingredients
7 small zucchini
1/2 cup egg whites
1/2 cup tomato sauce
1 tbsp. italian seasoning
1 tsp. thyme
1 cup textured vegetable protein (tvp)

Directions

Step 1 – Cut your cleaned zucchini in half and scoop out the inside into a bowl. (yes, I had to mention “cleaned”, cause you know somebody out there would skip that step if I didn’t say it. Ick.) Set your scooped out zucchini halves on a parchment lined cookie sheet or baking pan

Step 2 – Add the rest of the ingredients to the bowl and mix well.

Step 3 – Add the TVP and stir again. Mix well.Step 4 – Using a spoon, scoop the mixture back into your zucchini halves. Be generous. You should get all of the mixture back into the zucchini halves.

Step 5 – Bake in the oven at 350 degrees F. until the zucchini is soft. About 20-30 minutes. A fork should easily pass through it.

*If you let these get cold, you can serve them on a platter as finger food with a bowl of plain tomato sauce on the side for dipping. Makes a really unique and healthy party appetizer, and your guests will have a hard time figuring out that it’s vegetarian.

Fall Cocktails

A delightful alternative to traditional coffees, ciders and toddy’s at holiday gatherings or just on a cold winter’s night.

Ingredients:

One bottle (750 mL) of red wine (suggestions: Cabernet Sauvignon, Zinfandel, Merlot)
One peeled and sliced orange (keep peel to add zest to taste into cooking pot)
1/4 cup of brandy
8-10 cloves
2/3 cup honey or agave
3 cinnamon sticks
1 tsp fresh or 2 tsp ground ginger (allspice can be substituted)
Serves 4-6

Preparation:

To make the perfect cup of mulled wine, combine all ingredients in either a large pot or a slow cooker. Gently warm the ingredients on low to medium heat (avoid boiling), for 20-25 minutes. Stir occasionally to make sure that the honey or sugar has completely dissolved. When the wine is steaming and the ingredients have been well blended it is ready to serve. Ladle the mulled wine into mugs (leave seasonings behind) and enjoy!

These 2 cocktails are “Treats”. These are to have as your treat and only have a couple. I honestly have to include them because the Carmel Apple martini has been Dave and I’s treat a couple times and it is better then any dessert. Enjoy (sensibly)!

Caramel Apple Martini

Serves 1
1 ounce green apple-flavored vodka
1/2 ounce apple schnapps
1 ounce butterscotch liqueur
Apple slice for garnish

In a cocktail shaker with ice, shake vodka, apple schnapps, and butterscotch liqueur . Strain into a martini glass .Garnish with an apple slice.

Pumpkin Pie-tini

Serves 1
Graham cracker crumbs
1-1/2 ounces vanilla unsweetened almond milk
2 tablespoons pumpkin puree
1-1/2 ounces vanilla vodka
1-1/2 ounces crème de cacao
Cinnamon stick for garnish
Rim a martini glass with graham cracker crumbs.

In a cocktail shaker with ice, shake milk and pumpkin puree to combine. Pour in vodka and crème de cacao and shake well. Strain into the graham cracker-rimmed martini glass. Garnish with a cinnamon stick.
