Regular Turkey Muffins

Absolutely, feel free to have fun with the recipe and add whatever you like to it.

Ingredients:

2lbs lean white ground turkey (you can also use ground chicken)
1 cup diced tomatoes (I use low sodium from a can)
7 egg whites
1+ cup chopped fresh broccoli flowerets (I actually use a little more because I like more veggies with each bite)
1 1/2 cups of quick cooking oats (more or less to suit your needs)

Mix all incredients together with your hands. I also add chopped onion, minced garlic and Mrs. Dash/salt/pepper to taste. Pre-heat the oven to 350 degrees. This recipe makes about 16 small muffins (serving size about 2). I bake them for about 30-35 minutes (I like my turkey tops crispy). Cooking times may vary depending on your oven…just make sure that they are cooked all of the way through. Enjoy and let me know how you like them.
