Ingredients:
20 oz lean ground turkey breast
3 cups fresh spinach, chopped
1 cup salsa
1 medium red onion, chopped
4 egg whites
1 package knorr vegetable soup mix
1/4 cup ground flax seed
cumin, thyme, salt & pepper to taste (eyeballed it all)
mix ingredients together with your hand.. classy 😉
once it is mixed:
plop 1/12 of the mixture into each one of my silicone baking cups. LOVE this muffin tray. no cooking spray necessary. i highly recommend silicone mats/baking cups/etc!
baked at 350 degrees [f] for 45 minutes.

How many muffins is a serving for dinner? What do you recommend to eat on the side with these? A salad?
The first recipe can be with supper. That would be 2. You can have your veggies and salad on the side. That will be a great full meal!
What size silicon baking cups are you referring to? Are they the mini ones or normal size?

Can I sub out the soup mix? I don’t love the ingredients in the knorr mix.
Yes! You sure can! I use a natural organic one that works great!!! Low sodium too. Or just use spices are you wish 🙂
Anyone tried freezing these?
Yes, I wrapped them in wax paper first and then stuffed them in a tupperware. Worked great.
