This recipe is minty good! If you like mint chip ice cream you will enjoy this recipe.
After making my Coconut Snow Balls the other day I got on an ice cream kick. My husband’s favorite ice cream is Chocolate Mint Chip so I wanted to create something I knew he would love.
This time of year I love the flavors of chocolate and mint together and these little balls are the perfect combination. These ice cream balls are colored with a secret sneaky ingredient – spinach! Don’t worry you can’t taste it. If the idea freaks you out too much you can either leave it out or use a natural green food coloring.
This recipe is best served just like ice cream – straight from the freezer and also is stored in the freezer.
I hope you enjoy this personal size cold Holiday Dessert.

Do you think you can substitute the spinach for kale?
Hey Jen! You can try it but I find kale has a stronger flavour so it might not work the same.
