Oh this recipe makes me excited! These Dark Chocolate Wrapped Salted Caramel & Pecan Pie Bars are simply divine.

This is a sweet, decadent treat that will please everyone! It doesn’t matter if you are vegan or not this dessert is absolutely delicious.

The bottom layer is a blondie brownie crust. The center of these bars is a sweet and rich pecan pie filling with a thick salted caramel swirl. If that isn’t sinful enough these bars are then wrapped in dark chocolate.

Yes, I know. And yes, these bars are as good as they look. I would dare to say they taste better than what they look like.

This recipe is a wonderful way to share healthy treat options during the holiday season. Everyone will love them and be so surprised by their natural, whole food ingredients.

Dark Chocolate Wrapped Salted Caramel & Pecan Pie Bars

Yield: Makes 16-18 Mini Bars

Dark Chocolate Wrapped Salted Caramel & Pecan Pie Bars

Ingredients:

    Blondie Brownie Crust Ingredients:
  • 1 Cup Slivered Almonds
  • 1 Cup Walnuts
  • 1 Cup Super Soft Pitted Medjool Dates
  • 1/4 tsp Sea Salt
  • 1 tsp Vanilla Extract
  • Pecan Pie Ingredients:
  • 1 Cup Super Soft Pitted Medjool Dates
  • 1 Cup Pecans
  • 1 Large Ripe Banana
  • 2 Tbsp Maple Syrup (I do not find this necessary but if you have a super sweet tooth you may)
  • 1 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • Salted Caramel Ingredients:
  • 1/2 Cup Super Soft Pitted Medjool Dates
  • 1 1/2 Tbsp Almond Butter
  • 1/2 tsp Sea Salt
  • 2 Tbsp Coconut Oil
  • 1 tsp Vanilla Extract
  • Chocolate Coating:
  • Melted Vegan Dark Chocolate Chips or our Chocolate Candy Coating Recipe found here.

Directions:

  1. Line an 8x8 baking dish with parchment paper.
  2. Place all crust ingredients into your food processor and pulse until finely chopped/dough-like.
  3. Press crust into the bottom of your baking dish.
  4. Place all pecan pie ingredients into your food processor and blend until completely smooth stopping to scrape down the sides.
  5. Set aside in a bowl.
  6. Place all salted caramel ingredients into your food processor and blend until completely smooth.
  7. Using a spoon swirl caramel into your pecan pie mixture.
  8. Spread combined mixture over your blondie brownie crust.
  9. Cover and place in the freezer for 4 hours (to overnight).
  10. Remove from freezer, cut into bars and place on a cooling rack to coat with your chocolate.
  11. You can drizzle with chocolate or completely coat your bars.
  12. Serve immediately or place back in the freezer in a sealed tight container to enjoy later.
