The perfect breakfast for weight loss and maintenance is the protein pancake hands down! It is everything you need to start your day in one little pancake. These are perfectly balanced with healthy natural whole grain carbs, lean protein, healthy fruits (or veggies) and healthy fats! What more could you ask for? Oh, by the way, they taste amazing!!! So get rid of boxed cereals and pick up the following ingredients. Below I am going to give you 7 ways I love my protein pancake! My personal favorite is the Tex Mex Protein Pancake. I could eat this everyday (I pretty much do). You can make these up in bulk and reheat them in the morning or whenever you’d like to have one. These will please the whole family.

*Each recipe below makes 1 serving. Use the same directions for all recipe unless otherwise noted.
 

Blueberry Protein Pancake Recipe

1/2 cup dry old fashion oats
1/3 cup egg whites
1/4 cup blueberries
1 tsp ground flaxseed
1 tbsp almond milk
1/2 pack stevia
sprinkle of cinnamon

Mix all ingredients together in a bowl.

Lightly oil and heat your frying pan. Place all ingredients in your pan and cook the same you would a regular pancake. If your pancake breaks, don’t stress, just make your pancake into a protein scramble. It tastes exactly the same. Sometimes when I am in a hurry in the morning I just head right for the protein scramble.

Banana Protein Pancake


 
1/2 cup dry old fashion oats
1/3 cup egg whites
1/2 mashed banana
sprinkle cinnamon
1 tsp ground flaxseed
1 tbsp almond milk
½ pack stevia
Optional: lightly drizzle with agave
 

Strawberry Delight Protein Pancake


 
1/2 cup dry old fashion oats
1/3 cup egg whites
1/4 cup sliced strawberries chopped
dash cinnamon
1 tsp ground flaxseed
1 tbsp almond milk
½ pack stevia
Optional: Try the Healthy Strawberry Coulis below to top your pancake.
 

Banana Cream Protein Pancake

1/2 cup old fashion oats
1/3 cup egg whites
1/2 sliced banana
dash cinnamon
1 tsp ground flaxseed
1 tbsp almond milk
1/2 pack stevia

After the pancake is cooked you can add this sweetened greek yogurt:
2 tbsp greek yogurt with some stevia or agave mixed in to sweeten. Dollop the mixture on the pancake with the sliced bananas on top.
 

Ginger Bread Protein Pancake


 
1/2 cup dry old fashion oats
1/3 cup egg whites
1/4 of chopped apple
dash cinnamon
1 tsp ground flaxseed
1 tbsp almond milk
½ pack stevia
Optional: lightly drizzle with agave
 

Pumpkin Pie Protein Pancake

1/2 cup dry old fashion oats
1/3 cup egg whites
1/4 cup of purred pumpkin
dash cinnamon
dash of pumpkin pie spice
1 tsp ground flaxseed
1 tbsp almond milk
½ pack stevia
Optional: lightly drizzle with agave

If you are feeling fancy feel free to make a healthy coulis.
 

Healthy Coulis topping for DAMY Protein Pancakes:

This recipe is for a weeks worth of coulis.

1 cup frozen strawberries
2 packets of stevia
1 tbsp lemon juice

In a medium sauce pan combine the stevia, strawberries and lemon juice. Bring to a boil over med-high heat. Then transfer to a blender and puree until smooth. Strain and set aside until cool. Store in the fridge for up to one week.

Add 1 tbsp to your favorite protein pancake.
 

Tex Mex Protein Pancake (my all time favorite)


 
1/2 cup dry old fashion oats
1/3 cup egg whites
1/4 cup onion and red pepper
1/4 tsp of garlic salt
2 tbsp salsa
1/4 cup dry curd or low fat cottage cheese
Hot Sauce (optional and to taste)
(if you wanted you could add more protein like ground turkey)

Add the 2 tbsp of salsa to the pancake after one side is cooked and before flipping the other.
Add 2 tbsp of greek yogurt and 2 tbsp salsa to the side for dipping.
