It’s that time of year! Maple time! Everyone loves maple, there is something about maple that makes us feel like a kid again. It reminds us of trip to the sugar woods and the Sunday pancake breakfasts with our family. Living is on the West Coast now I have to admit that the maple out here is just not the same. Last week I received a package in the mail from my wonderful Mother in law. Its was Nova Scotia maple!!! I could not have been more excited. I wanted to dig in with spoon till I had a maple hang over, but I didn’t. Instead I found some healthy way to have maple in my diet.

 Maple syrup has some great health benefits one being that it contains manganese. This trace mineral is an essential cofactor in a number of enzymes important in energy production and antioxidant defences.

 Have some maple here and there! Here is a great salad dressing that I have come to love that tastes even better with my Nova Scotia maple.

2 tbsp Maple syrup
2 tbsp Udo’s oil
4 tbsp balsamic vinegar
Wisk all ingredients together. Spoon 1-2 tbsp of the mixture over salad, cooked veggies or fish!
