This is a sexy recipe! I think it is perfect for Valentine’s Day. Oh heck, it’s good for any day!
Some of you already know I gave up drinking coffee in September. One thing I have missed is my occasional treat of a Skinny Cinnamon Dulce Latte from Starbucks. I just miss the flavors. So… I decided to take those flavors that I love of caramel and cinnamon and create a sexy, raw dessert for Valentine’s Day.
What makes this dessert sexy? The spiciness of the cinnamon, the sweet smoothness of the caramel, the chilling temperature of the dessert and the most sexy thing of all – it’s raw, vegan, whole food. That’s sexy!

This recipe is gluten free, grain free, clean, whole food, vegan, raw, high fiber, sweet, sexy and delicious!

Raw Cinnamon Dolce Cheesecake
Prep time: 10 Minutes
Yield: Makes 8 Servings
Caramel Sauce Ingredients:
- 1 Cup Pre-Soaked Dates
- 3 Tbsp Agave Nectar
- 2 Tbsp Natural Almond Butter
- 1/4 Tsp Salt
- 2 Tbsp Coconut Oil
- 1 1/2 Tsp Vanilla Extract
- 3 Cups Pre-Soaked Cashews
- 1/4 Cup Coconut Oil
- 1/4 Cup Agave Nectar
- 1 Tbsp Cinnamon
- 1 Cup Natural Walnuts
- 1 Cup Natural Slivered Almonds
- 1 Cup Pre-Soaked Dates
- 1/4 Tsp Salt
- 1 Tbsp Vanilla Extract
Directions:
- Place all caramel sauce ingredients into your food processor and blend until completely smooth.
- Set aside.
- Blend all cheesecake ingredients until completely smooth, add in 1/2 of your caramel sauce and continue blending until completely mixed.
- Set aside.
- Pulse all crust ingredients until it is a sandy, crust texture that forms a solid crust when pressure is applied.
- Spray an 8 inch spring form pan with a healthy, non-stick cooking spray.
- Place crust evenly into the bottom of the pan.
- Top with cheesecake filling.
- Cover and place in the freezer for 5 hours or overnight.
- Remove from freezer and spring form pan.
- Drizzle with remaining caramel sauce before serving.
- Enjoy!
*Tip – You can use mini spring form pans or moulds in different shapes for individual-sized cheesecakes.

I finally got around to making this yesterday. I LOVED the caramel top layer and could easily eat that straight with a spoon! Tastes like the real deal. However I found the middle layer quite bland. I wonder if doubling the amount of caramel you make and adding more to that layer might make it a little tastier??
