Raw Oreo Ice Cream Sandwiches
Prep time: 10 Minutes
Yield: Makes 8-9 Ice Cream Sandwiches
Chocolate Cookie Ingredients:
- 1 1/2 Cups Almond Flour
- 1/4 Cup Coconut Oil
- 1/4 Cup Agave Nectar
- 1/4 Cup Cocoa Powder
- Dash of Salt
Vanilla Icing Ingredients:
- 1/4 Cup Coconut Oil
- 1/4 Cup Cashew Butter
- 3 Tbsp Agave Nectar
- 1/4 Cup Coconut Milk
- 1/4 Tsp Vanilla Extract
- 1/4 Cup Shredded Coconut (Optional)
Directions:
- Place all chocolate cookie ingredients into your food processor and blend until dough-like.
- Remove from food processor, place in a bowl and set in the refrigerator.
- Using a clean bowl and blade place all icing ingredients into your food processor and blend until smooth.
- Layer chocolate cookie dough into your muffin tins or silicone molds by pressing down and forming a patty.
- Top with a layer of icing and then one more layer of chocolate cookie dough.
- Press down gently, cover with saran wrap and place in your freezer overnight.
- Remove from muffin tin or silicone molds and enjoy immediately.
- Tip – Silicone molds work like a dream. The cookies pop right out.

Could you explain the purpose of using baking soda if you’re not baking it? Just curious.
I use it because this is a recipe that is adapted from a recipe I bake. There is something about keeping the flavours the same I personally enjoy. You are free to take it out if you wish 🙂
i do not see any baking soda in the recipe…but why would you need it if you are NOT baking it? it’ll just ruin the taste

These are soooo good. I lined a muffin tin with Saran wrap and they popped right out and I put them in a Ziplock bag.i ran out of chocolate for the top of one but it is still tasty.

my coconut oil is very liquidy but i’ve seen it in a more solid form. will either work?
Yes! They are the same. When it is in the oil constancy it just means it is in warmer temperature. For instance in our home in the summer our coconut oil will be liquid. In the winter it is solid.
Would it be okay to use wheat flour instead of almond flour?
Sure! I am not sure of the flavour but I am sure it will work.

I loved this idea and i just tried it but my Oreo part didn’t turn into a dough. Its a bit too crumbly. What can i do to it next time to make it more doughy?
That is so weird! you can add more coconut oil or 1-2 TBSP of water next time.
