My Fruity Nutty Chocolate Valentine

Serves 16

We call this recipe a Valentine because of its high ratio of heart-healthy nuts. Plus, by using simple ingredients with no artificial colors and flavors you show you care. Package the completed treat for your Valentine in a pretty container with a love note…and a reminder not to eat it all at once because you want to love them through a long, healthy life!

Ingredients

2 (3-ounce) 365 Everyday Value Organic Swiss Dark Chocolate bars, chopped

1 (1-pound) bag 365 Everyday Value Fruit & Nut Trail Mix, divided

Directions

Line a large sheet tray with parchment paper; set aside. Gently melt chocolate, stirring frequently, in a medium pot over medium-low heat, 1 to 2 minutes. Stir in all but 1/4 cup of the trail mix and spread the mixture on the lined sheet tray. (Spreading to edges is not necessary.) Sprinkle remaining trail mix on top. Chill in the refrigerator until chocolate is set, about 30 minutes. Set aside until room temperature, break into pieces and store in an airtight container at room temperature.
 
 

Flourless Brownies

Makes 16

No one will ever guess the secret ingredient in this recipe: black beans!

Ingredients

1 (15-ounce) can no-salt-added black beans, drained and rinsed

3 large eggs

1/3 cup melted vegan butter, coconut butter, OR olive oil (a little more to grease the making dish)

1/4 cup cocoa powder

1/8 teaspoon salt

2 teaspoon vanilla extract

1/4 cup plus 2 tablespoons stevia sugar (you can also use agave)

1/2 cup semi-sweet chocolate chips (or carob chips)

1/3 cup finely chopped walnuts

Directions

Preheat oven to 350°F.

Butter an 8-inch baking pan. Place the black beans, eggs, melted coconut butter, cocoa powder, salt, vanilla extract and stevia in the bowl of a food processor and blend until smooth. Remove the blade and gently stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan. Bake the brownies for 30 to 35 minutes, or until just set in the center. Cool before cutting into squares.
 
 

Creamy Cherry Dip

Makes about 2 cups

Serve this rich and creamy dip with strawberries, grapes,  sliced kiwis, bananas and pineapple for dipping. So rich and creamy!

Ingredients

1/2 pound cherries (about 2 cups), pitted

7 ounces silken tofu, drained (or non fat greek yogurt)

1/4 cup finely chopped pineapple

1 tablespoon honey (or agave)

Directions

Purée all ingredients together in a blender until smooth and frothy. Transfer to a bowl, cover and chill until cold, about 2 hours. Stir well before serving.
 
 

Hempseed Apricot Chews

Serves 24

Hempseeds are a great source of omega-3 fatty acids. Sweet, nutty, chewy and dense, this snack satisfies that afternoon craving for sweets. Store them in an airtight container in the refrigerator for up to two weeks.

Ingredients

3 cups (about 1 pound) dried apricots, roughly chopped

1 cup chopped pitted dates

1 cup shelled hempseeds

2 tablespoons lemon juice

1 teaspoon ground nutmeg

1 teaspoon gluten-free vanilla extract

Directions

Line an (8-x-8-inch) pan with parchment paper and set it aside.

Pulse all ingredients in a food processor until mixture forms a chunky paste. Transfer to prepared pan and press with a spatula to create an even thickness. Cover and chill until firm, 1 to 2 hours, and then cut into squares for serving.
 
 

Low Carb Coconut Macaroons

Preheat oven to 300 degrees

Ingredients

2 egg whites

2 packets Truvia or stevia

1 tbsp Agave Nectar

1 scoop vanilla whey protein powder

2/3 cup unsweetened shredded coconut

Directions

Add egg whites, Truvia, and Agave to a medium sized bowl and whisk well.  Add protein powder and shredded coconut and stir until combined.  Use a tbsp to scoop batter onto a cookie sheet lined with parchment paper.  Batter will spread out so keep them far apart.  Bake for 22 min.
