This is the perfect recipe to get more veggies into your meat-loving loved ones. Who am I kidding it is the perfect recipe for anyone that’s anyone anywhere.
Can you tell I’m excited?
This recipe can be used in many different ways. For lunch I would suggest:
- Serving this recipe in brown rice wraps with some purple cabbage, green apple, a spritz of lime juice and some sesame seeds.
- If you don’t eat bread or wraps I think this would be delicious on a bowl of quinoa served as suggested above.
- For the men in your life serving this on a crusty whole wheat bun with some red cabbage and extra sauce is perfect.
For supper I would suggest:
- Serving this in lettuce wraps
- Collard green wraps
- Cabbage leaves
Add some shredded purple cabbage, lime juice and hot sauce and you have a delicious supper.
Note: When you’re making this recipe the sauce at first won’t seem like it’s enough but as it cooks down and water released from the cauliflower it is more than enough.

This recipe is vegan, gluten free, soy free, dairy free, meat free, high fiber, filling and delicious.
Ingredients:
- 1 Large Head Cauliflower (cut into flourettes)
- 1 Cup Organic Tomato Sauce
- 1/4 Cup Maple Syrup, Coconut Sap or Agave
- 1 1/2 tsp Smoked Paprika
- 1/2 tsp Cumin
- 1 tsp Chili Flakes
- 1 1/2 tsp Garlic Powder
- 1 tsp Salt (more to taste)
- 2 tsp Pepper
- 2 Tbsp Coconut Oil (melted)
- 1 Medium White Onion (diced)
- 1 Bell Pepper (diced)
- 3 Garlic Cloves (crushed)
Directions:
- Pre-heat your oven to 350F.
- In a large mixing bowl combine all spices and mix evenly.
- Add maple syrup, tomato sauce and coconut oil to spices and mix evenly.
- Add in remaining ingredients and completely coat veggies with sauce/spice mixture.
- Add your mixture to a large glass baking dish.
- Bake for 60-90 minutes stirring every 30 minutes.
- When you have cauliflower removed from the oven while baking use a fork to press cauliflower flourettes down. Use a scraping motion to form pulled pork texture.
- Remove pulled cauliflower from the oven, place in buns, lettuce wraps, etc.
- Serve and enjoy!
