Who doesn’t want an ice cream sandwich? Well, I know I do! So, I created this amazingly healthy, guilt-free, beyond delicious chocolate fudge coconut ice cream sandwich.

This recipe will be appealing to adults, children and craving people alike.

This recipe is gluten-free, vegan, dairy-free, flourless, clean and so delicious!
 

Clean Chocolate Fudge Coconut Ice Cream Sandwiches

Makes 10-12 Cookies

Ingredients:

  • 3 Tbsp Cocoa
  • 1/4 Tsp Cinnamon
  • 1 1/2 Cups Chickpeas
  • ¼ Cup Agave (or Stevia, Honey, Maple Syrup)
  • 3 Tbsp Natural Peanut Butter (Almond Butter, Cashew Butter or any Seed Butter)
  • 1/3 Cup Unsweetened Coconut
  • 2 Tsp Vanilla Extract
  • 1/4 Cup Ground Flax
  • 1/8 Tsp Baking Soda
  • 1/8 Tsp Baking Powder
  • 2 Tbsp Pumpkin Puree
  • Dash of Salt

Directions:

  1. Preheat oven to 350 F.
  2. Place all ingredients into the food processor and blend until smooth (stopping to scrape down the sides).
  3. Cover baking sheet with parchment paper. Add scoops of cookie batter to parchment paper spacing them out so they do not touch.
  4. Bake for 19-26 minutes – check on these often as every oven is so different!
  5. Remove from oven and place on a wire rack and let cool. These can be kept in a container in the refrigerator or can also be frozen (freezing in pairs of twos will give you an easy to grab snack without overindulging.

If you’re making more than two ice cream sandwiches you can just simply double or triple the ice cream recipe.

  1. Scoop ice cream on to one cookie and top with another cookie.
  2. Enjoy immediately!
