Caramel Apple Sugar Cookie Bars

Total Time: 30 minutes

Yield: Makes 12-16 Bars

Caramel Apple Sugar Cookie Bars

Ingredients:

    Apple Filling Ingredients:
  • 3-4 Firm Apples (diced)
  • 1 Tbsp Fresh Lemon Juice
  • 1 Heaping Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 1 Pinch of Sea Salt
  • Caramel Ingredients:
  • 1 Tbsp Coconut Oil
  • 6-8 Pitted Fresh Medjool Dates
  • 10 Drops of Liquid Stevia
  • 1 Tbsp Water
  • Sugar Cookie Crust:
  • 1 1/2 Cups Almond Flour
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Maple Syrup
  • 1/4 Tsp Baking Soda
  • 1 Tsp Vanilla Extract
  • Dash of Sea Salt

Directions:

  1. Pre-heat your oven to 350F.
  2. Place all sugar cookie crust ingredients into your food processor and blend until smooth.
  3. Lightly grease an 8x8 baking dish with a healthy, non-stick cooking oil.
  4. Press cookie dough down into baking dish and place in the oven for 8-15 minutes (watch carefully - only until golden brown).
  5. Remove crust from oven and let cool completely until room temperature (very important).
  6. If you are in a hurry you can place the crust in the refrigerator or freezer for a short while to cool down.
  7. Place chopped apples, lemon juice, cinnamon, nutmeg and salt into a large bowl and toss.
  8. Place dates, stevia, vanilla, coconut oil and water into your food processor and blend until smooth.
  9. Add caramel mixture to apples and coat completely.
  10. Over low to medium heat in a lightly greased pan place your apple mixture and cook until caramelized (10 minutes). You want your apples to be warm but still slightly firm.
  11. Place apple mixture over sugar cookie crust.
  12. Cut into squares.
  13. Serve and enjoy!
