I had a request to create this recipe! I love requests. It keeps things fresh in the kitchen.
This recipe is really easy to make and is honestly delicious. It is also extremely filling and satisfying.
This recipe is great to pack for on-the-go nutrition. Feel free to add in the nuts or leave them out which ever your preference. My husband took these muffins and turned them into a treat by drizzling some honey over the top. They were so good!
This recipe is loaded with great nutrients and is wonderful for the entire family.

This recipe is gluten free, grain free, high fiber, filling and the perfect Fall Muffin!
Zucchini Nut Quinoa Muffins
Prep time: 10 Minutes – Cook time: 35-40 Minutes – Total time: 45 Minutes
Yield: 12 Regular Size Muffins
Ingredients:
- 3 Cups Cooked Quinoa
- 1 Cup Egg Whites
- 2 Cups Shredded Zucchini
- 2 1/2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Cup Chopped Walnuts or Pecans (Optional)
- 1 1/2 Tsp Vanilla Extract
- Dash of Salt
- 1 Tsp Baking Soda
- 6 Stevia Packets
- 2 Tbsp Honey
Directions:
- Pre-heat oven to 350 F.
- Place all ingredients in a bowl and stir until completely mixed.
- Line a regular muffin tin with paper liners (These muffins can be fragile when hot so using paper liners helps with this).
- Scoop batter evenly into each paper liner.
- Place in the oven and bake for 35-40 minutes (watch these as everyone’s oven is different).
- Remove from oven and let cool on a cooling rack before serving (This is to let them set).
- Serve and enjoy!

How many egg whites is a cup?
You will have to measure them as they are all different. 1/4 cup is approximately 2 egg whites.

why are mine so stuck to the wrapper and yours aren’t? How did you stop that?
Hey Avery! I spray mine before I use them. Better yet using silicone liners for the very best results. Still spray them before you use them.
What is the nutritional information for the zucchini quinoa muffins?
How much stevia is in one packet? My stevia is not in packets…thx.
Hey Lisa! All brands are different. There should be info on the side of your package of what the measure is compared to sugar. I would use the equivalent amount of stevia to 4 Tbsp of real sugar. Start there and test the batter to see how sweet you would like it.
My muffins didn’t get firm, the inside stayed gooy. Does the quinoa need to cool first? or can you use it right after cooking it? They do taste great tho ;0)
These muffins look delicious! Is there any alternative for the egg whites for us vegans…?
Hey Zoey! Yes! I was told that one member used 1 cup of silken tofu and the whole eggs with two ‘flax eggs’ (2 tbsp ground flax seeds – or chia seeds – and 6 tbsp of filtered water) and they turned out great! Just remember to let your flax eggs set before you use them so them are “gummy”
I looked up some of your vegan recipes as they looked gorgeous but you keep using egg whites. Slightly confused. Is Egg Whites a replacer brand in the US? (from the UK) With thanks and appreciation. Cathi x PS they still do look gorgeous vegan or not!
Hey Catherine! I am not sure what you mean. All vegan recipes are labelled “vegan” and have no egg whites. This recipe is not listed as vegan. This is not a 100% vegan blog. If you substitute agave nectar for stevia how much might you use?
Why egg white & not the whole (organic) egg- which is where all the nutrients are?
Mine were sooo soggy. I would certainly recommend shredding the zucchini in a strainer, adding some salt, letting them sit a while, and then squishing the water out. I don’t know if that was the sole culprit of why they were soggy, but the paper liners never came out with the muffins. I baked 10 extra minutes and still couldn’t get them to set up. 🙁 Bummer!!
