This recipe is 2 minute prep, vegan, raw, clean, no-sugar added, dairy-free, guilt-free, gluten free, no-bake and tastes amazing.
Clean Vegan Coconut Ice Cream
Makes 2 Servings.
Ingredients:
- 2 Sliced Frozen Bananas
- Pinch of Salt
- 3 Packets of Stevia
- 1 Tsp of Vanilla Extract
- 1/2 Tsp Cinnamon
- 1/4 Cup Light Coconut Milk
- 2-3 Tbsp Shredded Coconut
Option – 1 Scoop Vanilla Protein Powder
Directions:
- Place all ingredients in your food processor and blend until smooth.
- Serve immediately.
- Enjoy!

I tried putting frozen bananas in my food processor and smoke came out…of the machine, not the bananas. It is kind of a whimpy machine. I have a good blender though…would a blender be able to conquer frozen bananas?

That is no good. I am not a specialist in kitchen appliances. I have the best food processor. (a large kitchen aide) It has never given me a problem. Make sure you cut your banana into slices before freezing. It would like maybe letting them melt just a bit mihgt be an option for you as well. Good luck!
Thanks Amy. I think blending with liquid (coconut milk) will also help. Last time I didn’t have any liquid and the bananas were in chunks. I LOVE ice cream so am trying to find a healthy yet delicious alternative. Tried crumbling protein balls over “healthy” soy ice cream from the grocery store to make a blizzard but we didn’t really like the ice cream. Can’t wait to try this.
