These brownies are gluten free, high in protein and include a vegan option. They are packed with fiber and are a guilt-free way to indulge in ‘cakey-chocolate.’
I didn’t make this recipe overly sweet because I find with the cookie dough hummus frosting it is perfectly sweet enough. If you prefer a sweeter brownie feel free to add more agave, honey or stevia.

Quinoa Brownies with Cookie Dough Frosting
Makes 16 Brownies
Ingredients:
- 1 Cup Cooked Quinoa
- 2 Packets Truvia (or Stevia of Choice)
- 1/4 Cup Cocoa
- 1/4 Cup Unsweetened Almond Milk
- 3 Tbsp Plain Pumpkin Puree
- 2 Eggs (or 1/4 Cup Ground Flax, 2 Tbsp Water and 2 Tbsp Nut Butter)
- 1 Tbsp Vanilla
- 2 Tbsp Agave (or Honey/Stevia)
- 1/8 Tsp Baking Soda
- 1/4 Cup Dark Chocolate Chips
Directions:
- Place all ingredients (excluding the dark chocolate chips) into the food processor and blend until smooth.
- Pre-heat your oven to 375 F.
- Stir chocolate chips into pureed batter.
- Grease your 8×8 baking dish.
- Spread batter evenly into pan.
- Bake for 19-22 minutes.
- Remove brownies from oven and let set for 5-10 minutes before moving to a cooling rack.
- Let cool and cut into bars.
- Right before serving frost these brownies with the cookie dough icing found below.
DAMY Members – 3 frosted brownies are a treat.
Cookie Dough Frosting
Ingredients:
- 1 1/2 Cups Chickpeas (Drained and Rinsed)
- 1/4 Cup Cashew Butter
- 1/4 Cup Unsweetened Almond Milk
- 1/4 Cup Agave (Honey or Stevia)
- 2 Packets of Truvia (or Stevia of choice)
- 3 Tbsp Flax Meal (Ground Flax)
- 1 Tbsp Vanilla Extract
- Dash of Salt
- 1/8 Tsp Baking Soda
- 1/3 Cup Dark Chocolate Chips (or Carob)
Directions:
- Place all ingredients (excluding the chocolate chips) in your food processor and blend until perfectly smooth.
- Scoop into a bowl (or onto your brownies) and stir-in chocolate chips.
- Serve!

how many calories dose it have?
The brownie is too bitter. And the garbanzo beans aren’t hidden at all.. I’d recommend adding more stevia to the brownie mix & using milk chocolate chips instead of dark.. And for the frosting I’d add more vanilla, more stevia, and maybe a little confectioners sugar.. I will try this recipe again soon with a little tlc & see what happens. The brownie was a great texture though!
Where’s the nutritional information?
So many recipes call for nuts. What can one substitute if they are allergic to nuts and seeds? Thank yoU!

In that case I’d try using more of the chickpea paste or a paste of another light bean in place of the nut butter (maybe thickened with the ground flax meal, or if you’re allergic to the flax as well then I’d try using either ground oats or maybe some coconut flour instead).

Of course then again peanuts are actually technically legumes and I think may also be in the nightshade family, coconut is a nut and if you are allergic to both as well as to the flax seeds then I wouldn’t be surprised if you were also allergic to some grains perhaps including the oats, in which case I’d have to re-think my answer for you altogether and also say to be careful about the soy lecithin that is often put in chocolate…

How many packets of stevia might you use for the brownies or how many drops of liquid stevia?
I would use 10-12 drops liquid stevia. But always test your batter and make sure it s to the sweetness of your liking 🙂
