Cook Time: 10 minutes

Total Time: 15 minutes

Yield: Makes 12-14 Macaroons

Vegan Almond Macaroons

Ingredients:

  • 1 1/4 Cups Almond Flour
  • 1/2 Cup Unsweetened Shredded Coconut
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Maple Syrup
  • 1/4 tsp Baking Soda
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 14 Whole Almonds

Directions:

  1. Pre-heat your oven to 350F.
  2. Place almond flour and coconut into your food processor and blend until it is a fine powder.
  3. Place the rest of the ingredients (excluding whole almonds) into your food processor and blend until dough-like.
  4. Scoop dough onto a parchment lined baking sheet forming 1 inch balls about two inches apart.
  5. Place in the oven and bake until golden brown (10-13 minutes).
  6. Remove from oven and let set on the baking sheet on a cooling rack for 10-15 minutes (this is important to set your macaroons).
  7. Press gently 1 almond into each macaroon.
  8. Gently remove macaroons from baking sheet and place on the cooling rack until completely cooled.
  9. Serve and enjoy.
