This recipe is gluten free, skinny, no-bake, and only takes 5 minutes to prep.
Skinny Cinnamon Bun Cheesecake Squares
Makes 18 Bites
Crust Ingredients:
- 1 Cup Pre-Soaked Pitted Dates
- 2 Cups Raw Pecans
- 1 Tsp Cinnamon
Non-Vegan Cheesecake Layer Ingredients:
- 1/2 Cup Non-Fat Cream Cheese
- 1 Tsp Vanilla
- 1/2 Cup Non-Fat Plain Greek Yogurt
- 2 Tbsp Honey (or Agave/Maple Syrup/Stevia)
- 3 Packets of Truvia (or Stevia Brand of Choice)
- 1 Tsp Cinnamon (or more depending on how much you want for the top)
OR
Vegan Cheesecake Layer Ingredients:
- 3 Cups Pre-Soaked Cashews (I soak mine overnight)
- 1/4 Cup Coconut Oil
- 1/4 Cup Agave Nectar (Maple Syrup or Honey)
- 1 Tsp Vanilla Extract
- Juice of 1/2 a Lemon
- 1 Tsp Cinnamon (or more depending on how much you want for the top)
Directions:
- Using your small food processor bowl and blade blend all cheesecake filling ingredients (except the cinnamon) until smooth and set aside.
- Using your large food processor bowl and blade process all crust ingredients until dough like consistency with visible chunks of nut.
- Grease an 8×8 baking pan or glass dish with a healthy oil.
- Press crust mixture evenly into baking dish.
- Top with cheesecake filling using a spoon or spatula to make sure the filling is evenly distributed over the crust.
- Thinly sprinkle your cinnamon over the top.
- Cover with saran wrap and freeze overnight.
- When you’re ready to serve remove from the freezer, cut into squares and serve immediately.

Truvia has aspartame… aspartame causes a slew of neurological issues. Tell your readers to stick to stevia.

When you say: “pre-soaked pitted dates” how long do you soak them for, overnight? I was also wondering, the cheesecake bites that are pictured above; did you use the vegan or non vegan recipe? Thank you!
I just made these but they do not look like the picture? There is barely a layer of cheesecake filling and I used an 8×8 pan and rechecked all my measurements-did I do something wrong?
