Mango madness! I personally love mango so this recipe excites me! If you’re not a mango fan move along to my next recipe. This recipe is lighter in fat than our other cheesecake recipes due to using less cream cheese. The reason we can use less is the combination of the greek yogurt and mango when it freezes is a fabulous ice cream like texture.
This dessert to me is perfect for something to look forward to after a long, hard week of training and strict clean eating.

This recipe is no-bake, gluten free, skinny, light, 5 minute prep and tropical fruit fun!
Skinny Mango Cheesecake Bites
Makes 16-18 Bites
Crust Ingredients:
- 1 Cup Cashews
- 1 Cup Slivered Almonds
- 1/2 Cup Unsweetened Shredded Coconut
- 1 Cup Pre-Soaked Pitted Dates
- 1 Tsp Vanilla Extract
Non-Vegan Cheesecake Ingredients:
- 1/4 Cup Reduced Fat or Light Cream Cheese (Room Temperature)
- 1 Tsp Vanilla Extract
- 3/4 Cup Non-Fat Plain Greek Yogurt
- 2 Tbsp Honey (Agave, Maple Syrup or Stevia – to make it no sugar)
- 3 Packets of Stevia
- 2 Cups Mango Chunks (I used frozen brought to room temperature)
OR
Vegan Cheesecake Layer Ingredients:
- 3 Cups Pre-Soaked Cashews (I soak mine overnight)
- 1/4 Cup Coconut Oil
- 1/4 Cup Agave Nectar (Maple Syrup or Honey)
- 1 Tsp Vanilla Extract
- Juice of 1/2 a Lemon
- 2 Cups Mango Chunks
Directions:
- Using your small food processor bowl and blade blend all cheesecake filling ingredients until smooth and set aside.
- Using your large food processor bowl and blade process all crust ingredients until dough like consistency with visible chunks of nut.
- Grease an 8×8 baking pan or glass dish with a healthy oil.
- Press crust mixture evenly into baking dish.
- Top with cheesecake filling using a spoon or spatula to make sure the filling is evenly distributed over the crust.
- Cover with saran wrap and freeze overnight.
- When you’re ready to serve remove from the freezer, cut into squares and serve. To dress up this recipe you can always use our coconut whipped cream.
- Serve immediately.

Ok so I made this….it was disgusting! I made the vegan version and it was way too sweet! It had a horrible texture and didn’t taste good at all. I won’t be making this again! I’ve had vegan cheesecake before and this was by far the worst. I’m very disappointed because I really wanted to like it 🙁
Can I use cashew butter instead of soaked cashews for cheesecake layer? I don’t have powerfull blender to blend cashew to smooth consistency.

How much stevia is in a packet? I have a container of truvia I use for baking but don’t know how much to put in instead of stevia packets
