Stuffed Zucchini is a delicious, fun and low carb way to create a great meal. There are so many different options. Below I’m going to list my favorite healthy stuffed zucchini recipes.

The recipes below range from low carb to vegan to high fiber. Beside each I will write a note on how to prepare that recipe for best results.

DAMY Members – One Zucchini (or two stuffed zucchini halves) is your serving size. If the zucchini recipe you choose contains carbohydrates this is a lunch recipe. If the recipe you choose does not contain carbohydrates (or your leave the carbs out) it is a supper recipe. If the protein serving is not included in the recipe make sure to add it to complete your meal and of course a side salad.

 

 

25 Healthy & Delicious Ways to Stuff Zucchini (Low Carb & Vegan Options Included)

Prep time: 10 Minutes – Cook time: 35 Minutes – Total time: 40 Minutes
Yield: Makes 4 Servings.

Ingredients:

  • Medium – Large Zucchini (Sliced length-wise with the middle scooped out)
  • 1/2 Cup Water

Directions:

  1. Pre-heat oven to 375 F.
  2. Place zucchini boats in your baking dish, add your water to the bottom of the baking dish.
  3. Bake for 35-40 minutes.
  4. *For some recipes you will add your filling before you bake, some you will add after you bake and for a couple you will add 5 minutes before they are finished in the oven.
